What is the technical name of this type of wiring? I have also seen this w/o ground. Thank you.

NM (non-metallic) cable. There may be other brand names but that is basically what it is.

The stuff pictured looks like it's 60's or so era. I usually think of NM cable as anything plastic sheathed but I believe that the cloth-like wrapped stuff is still the same.

NM, or non-metallic cable, is the code defined term for it.

A brand name would be, for one example, RomexTM.

That is 'cloth-covered' NM with thermoplastic insulation on the conductors.

Prior to that was cloth covered with rubber insulation and tinned conductors (the copper was tinned to prevent chemical interaction between the copper and the rubber insulation).

When you seen rubber insulation it is almost assuredly bad in the walls and junction boxes and needs re-wiring.
