Should this gas connector line go through the wall, pipe goes through the sheetrock to gas stove on the other side of wall. Am I being too picky ?

Not at all. Hard pipe should go through wall and connector can be installed behind the oven. This is wrong.
G2422.1 3 Listed and labeled appliance connectors in compliance with ANSI Z12.24 and installed in accordance with the manufacturer's installation instructions and located entirely in the same room as the appliance.

An approved shutoff must be within the same room within 6ft and not through the wall in another room. Only gas fireplaces have a special dispensation on this rule. You must run 'piping' into the room with the appliance within 6ft. Must have the aforementioned shutoff. You must have a sediment trap unless range, dryer, luminaire or fireplace. Must have ground union or similar joint. Connector can only connect-not pipe.

Appliance connectors (which is what is in your photo) should not pass through walls, floors, etc. Only black iron, CSST (if protected), etc. may do so. A licensed plumber or qualified HVAC contractor needs to repair the install.
