Probably a fungus of some type. Probably from when the trusses were stacked and stored on the job site, then got rained on and wet - then never dried out before the fungi got a foot hold on the wood.

Was the wood solid, or soft and spongy?

I would guess that they got wet before they were installed and this is the result. Did the tips of the roofing nails look rusted?

I personally would not recommend a hygienist look at it because it is not in the occupied space. I know others will have varying opinions on this but I don't think it is a big deal.

No need for anyone else, you already have the structural engineer coming out. If the wood is not solid, they will (should) include that in their report.

I know some will freak out about "the mold" in the attic, but, I do not, and have not, I have, however, on occasion included in my report that the trusses were covered with fungi in places and were soft enough to stick my screw driver through - see photo (photo shows screw driver sticking in one side and out the other).
