Jeff,

In the grand scheme of things, this is not a huge issue. Yes, brick on a 45 degree angle would be a plus, but water ultimately will enter the structure at the shoulder location eventually. Remember that the chimney crown is commonly found made of mortar as well. There are many products available in the chimney industry that will seal these mortar crowns and or shoulders and address any water sealing issues this structure may have.
