I'm having a roof installed and it's just not looking right to me. The roof vent is uneven; wavy. Should the ridge vent ends be covered? This just makes sense to me. The valleys of the roof are not woven. Should I be worried? Thanks for your time.

You should discuss these concerns with your roofing contractor.

Your questions are too broad to realistically answer. Valleys don't have to be woven if valley flashing is installed. Ends of ridge vents are terminated differently depending on ridge vent type. If shingle lines aren't straight, that sounds like a poor quality issue. If the roof is wavy that could be a plywood issue. Is plywood assessment or repair part of the contract or did you go with the lowest bidder? From you descriptions no way to tell.
If weather permits, demand contractor cease all work until issues are resolved.
