umm, bad idea. Symptoms, poor performance, compressor failure due to high superheat.

I concur with the statements above. I'd also add that you could see frosting and freezing of the coil more often as well.
It is generally a bad idea to under-size your coil.

EM1P50 is the same as a WEM1P50
What is it rated for 4 or 5

What would happen if You put a smaller blower motor. On a 5 ton system say a 1/2 or a 1/4 horse power motor. The system still doesn't work they replaced the coil with a 5 ton coil.

I've run into this a few times lately and have called for HVAC to check it. Surely there must be some reason that the sizing is supposed to be matched, not larger or smaller. Mismatching must be a problem, otherwise why label the evaporator? The unit doesn't say "OK for 4 ton or smaller compressor".
